Garlic Blue Cheese Mayonnaise




I make a great garlic mayo that we enjoy and my friends are always asking for more. I can’t keep up with the requests.

A few weeks ago I was talking with my friend
Michael Wright; he has a site that I enjoy visiting,
http://www.athomewithmichael.com. I got the idea of doing a Garlic Blue Cheese Mayo. He has a Blue Cheese yogurt sauce that Patti says looks wonderful, and she wants to try it as a salad dressing.

So, I took my Garlic mayo recipe and just added a 6 oz. package of Blue Cheese.

If you like Blue Cheese and garlic you won’t be disappointed here.  There is more than just a hint of blue cheese and garlic. There is enough garlic and blue cheese here that you can actually chew. I have caught some people I won’t mention any names, but her initials are Patti, makes a sandwich with just this mayo and sourdough bread…

This Garlic Blue Cheese Mayonnaise will knock your socks off.

Ingredients:

 
1 quart jar of mayo (remove ¼ of mayo from jar and put away for other uses)
1 6 oz. package blue cheese
4 tbsp. garlic paste
4 Tbsp. dry roasted garlic
20-30 cloves of roasted chopped garlic
2 tbsp. coarse ground black pepper
4 tbsp olive oil (my oil is garlic flavored)
 

Directions:
Mix all the ingredients into the jar of mayo with a spoon. Place jar in the refrigerator overnight to let things blend. The dry roasted garlic will dry your mayo out as it absorbs most  of the moisture, so I found if I soak it in some olive oil first I don’t have that problem.

Remember that a recipe is simply an outline; it is not written in stone. Don’t be afraid to make changes to suit your taste. This has more than a hint of garlic and blue cheese, depending on your taste you may want to tone this one down.  For us, it’s just right.
