Date Night Is Not Always On The Grill

This was sent in by Si for a Rainy day...

Si’s Low cal Low carb stew

Ingredients

2 lbs pork
1 large onion
1 lb mushrooms
3 large Roma tomatoes
6 oz can Tomato sauce
1 1/2 cups orange juice
1 lime
5 cloves garlic
Salt
Pepper
Garlic powder
Cumin
Paprika

Trim fat off the meat and cut into bite size, coarsely chop the onion. and dice up the garlic cloves.
Place into a large bowl.
Add the salt, pepper, cumin, paprika and garlic powder,
then pour the OJ over it all and mix.

Allow to marinate for 1 or 2 hours.

Place some oil in the bottom of a large pot and pick the meat out of the marinade and brown under high heat.

Add the onion, OJ and spices to the pot and reduce heat to a simmer.
Add the coarsely chopped tomatoes and mushrooms to the pot.
Simmer until all are tender, and then squeeze in some lime juice to kill the sweetness.

Adjust spices to suite your personal taste.

Note….works equally well with beef or chicken.
