Cowboy John's Steak Kabobs
John sent us some of his Cowboy John’s Grilln’ & Dippn’ Sauce.

Cook Time: 10 minutes
Grill: Direct Medium Heat
I had a skirt steak, some tortillas and a plan. This sauce has some very interesting ingredients, coffee, chili powder, crushed peppers. You know me, so anything with chili and peppers is worth checking out. So, I cut my steak into strips that I could put on a skewer and marinate it for a few hours in the fridge. I made a fresh tomato salsa with tomatoes from our garden. We have red and yellow ones this year. I also added green onion, sweet onion, cilantro and a splash of lemon juice. The tomatoes were so sweet it was like candy and mixing with the Cowboy John’s was magic.
Ingredients:
2 lbs. skirt steak cut into strips
Cowboy John’s Grilln’ & Dippn’ Sauce
Tomatoes to skewer and anything else you may have on hand
Patti especially likes different mushrooms
Tortillas

Directions:
After you have cut up the steak and marinated it, you need to skewer it. Add your tomatoes and meat as you like and head for the grill. It is that simple. You will put them over medium direct heat 300- 350 for about 10 minutes, turning as needed. Heat your tortillas and you’re ready.
Preparing Grill: Direct Medium Heat
Preheat your grill to medium heat (350). Add your wet hickory chips to the fire and oil the grill. A cooking spray is easiest for this. (Note: you can add your hickory directly to the grill or you can use foil smoke packets.(Two handfuls wet chips and one dry, fold foil into a packet, poke holes in it with a fork and you’re good to go.)
Note: I use a spray bottle when cooking on the grill filled with a Worcestershire sauce and liquid smoke mix that keeps things moist and adds tons of flavors. (Mix is 3 parts Worcestershire with 1 part liquid smoke)
