Last week was Patti’s birthday and we did a prime rib roast for her on the rotisserie. I had this thing turning in the smoke for about 3 ½ hours at around 250 degrees.

Prep Time: 10 minutes

Cook Time: 3.5 Hours

Grill: Indirect Low Heat

Ingredients: Prime Rib Roast

Seasoning rub of your choice

Worcestershire Spray

Directions:

Season your roast and mount it onto your rotisserie. I always put it on the grill before I light it because it is hard to make any adjustments if everything is hot. Light the grill, add your wet wood, close the grill and open a beer.

You want to reach an internal temperature of 120 for rare. Keep in mind that the meat will continue cooking for 10 minutes after you remove it from the heat. Pull it and let it rest for 10 minutes before serving.

This is a good example of using you gas grill as a smoker. Every ½ hour or so check your heat and wood chips. Give the roast a spritz of your Worcestershire spray. The last hour I put one of my cooking grates back on with sliced sweet onion and garlic.

Preparing Grill:  Low Indirect Heat

Preheat your grill to low heat (250-300) and turn off one side so you will be cooking with indirect heat. Add your wet hickory chips over the fire and oil the grill. A cooking spray is easiest for this. (Note: you can add your hickory directly to the grill or you can use foil smoke packets.(Two handfuls wet chips and one dry, fold foil into a packet, poke holes in it with a fork and you’re good to go.)

Note: I use a spray bottle when cooking on the grill filled with a Worcestershire sauce and liquid smoke mix that keeps things moist and adds tons of flavors. (Mix is 3 parts Worcestershire with 1 part liquid smoke)
