Blackened Salmon Burger with Grilled Onions
This week we called Andy and told him we were craving some good salmon. He told us he had the fix for our craving, awesome wild caught Alaskan Salmon, sweet, tender and juicy. We can always count on Andy aka Western Beef & Seafood for prime goodies. So, after talking a bit about all the specials he’s got going on we asked him to send us some salmon and tuna.
Next day we received some beautiful salmon fillets and Ahi tuna steaks. It just can’t get any easier than that. In the past we have asked Andy to send us some steaks, turkey gourmet franks and he delighted us with a real nice brisket that we are doing tomorrow.

We had been thinking about blackened salmon for some time and then I thought it sounded good as a sandwich. OK a burger, even better. Really easy to do and your cook time is about 5 minutes and it’s time to eat. Patti and I were so ready.
Prep Time: 10 minutes
Cook Time: 5 minutes
Stove Top: cast iron skillet
Ingredients:
Salmon fillet, skin off
Blackening seasoning
Coarse ground dried garlic
Onion, grilled
Tomato, sliced
Buns & condiments of choice

Blackened Salmon in the Skillet
Directions:
Lightly oil your fillet with a little olive oil. Then, add your seasonings keeping in mind you want to make a crust. Drizzle a little olive oil in a skillet and bring up to heat around medium high. You want the skillet and oil hot but don’t want to burn the oil. And Patti doesn’t want her stove all greasy.
Watch the side of your fillet as your cooking it. You can see as it cooks to the center. The color lightens. You only need to cook these 2 or 3 minutes a side depending on how hot your skillet is, and the thickness of your fillet, and how done you like them. Patti likes rare, me medium.
