Country Bob’s Cowboy Stew

Between Ken’s two birthday dinners and our Super Bowl Barbeque rib extravaganza, Patti thought it was time for some homey comfort food. Time for a hearty beef stew. Our home smelled great for hours. Served with a salad and some buttered rolls and a fire blazing in the fireplace, we are talking home sweet home.

Prep Time: 20 minutes

Cook Time: 2 ½ hours

Ingredients: Country Bob’s Cowboy Stew

2 ½ lbs. beef stew meat, cut into 1” cubes

4 Tablespoons oil or bacon drippings

¾ cup all purpose flour

1 Tablespoon Country Bob’s Seasoning Salt

1 teaspoon dried thyme

1 teaspoon black pepper

3 cups beef broth

1 ½ cups Country Bob’s Spicy All Purpose Sauce

4 Tablespoons dried garlic

4 medium russet potatoes, cut into large chunks

6 carrots, peeled and cut in half

4 celery stalks, cut in half

1 large sweet onion, sliced thick

Directions: Country Bob’s Cowboy Stew

Combine all the dry seasonings with the flour in a large freezer bag. Heat your oil or drippings in large Dutch oven, we always use cast iron. Dredge beef cubes, a few at a time in flour mixture. Then, into the hot oil just to brown. After all the beef has been browned return to Dutch oven. Pour broth and Country Bob’s Spicy All Purpose sauce over meat. Cover tightly. Cook on low simmer 1 ½ hours. Mix the veggies in with the meat and continue your low simmer for another hour or until tender. Serve in bowls. The gravy will be soupy, perfect for dipping your bread.

We do our recipes on our patio where we have a lineup of grills, including Royall Wood Pellet Grill/Smoker, Traeger, Charmglow, Char-Broil, The Big Easy, Brinkman and Weber. I call it our “Wall of Grill”. Our grilling styles are healthy and low fat and will fit pellet heads, gas, natural wood and even charcoal purists. Almost any of our recipes can be done on any kind of good BBQ.

The important thing to keep in mind is TIME & TEMPERATURE. You can even do some of them in the oven or crock pot, but, then you lose all the flavors you get from cooking outdoors. But sometimes it does rain.

Remember that a recipe is simply an outline; it is not written in stone. Don’t be afraid to make changes to suit your taste.
