Peanut Butter & Jelly Bread Pudding

This sends me back to my childhood when my Dad would make bread pudding for something special and it was always a big deal for us kids. Makes me think of my folks, we lost Dad not long ago. Brings tears to my eyes. So this recipe is in memory of Dad, a good father, a Marine, a hero, a man. We miss him and Mom so very much.
Ok, let’s talk bread pudding. You can make this with any bread you have, stale is even better because it isn’t wasted.
We like to use sourdough bread that we get at the day old store. On this one we used whole wheat and Italian. You can mix the bread, it’s all good. Patti especially likes cinnamon-raisin bread, but Ken’s not a huge fan of cinnamon. We did this one in the oven. But, if it were not raining we would have put it on one of our Royall’s.
Prep Time: 5 minutes
Cook Time: 2 hours
Oven: 1 hour @ 350 degrees
Ingredients: Bread
4 cups milk, we like 2% or fat free half & half
4 eggs, beaten
1 cup peanut butter, creamy or chunky
16 oz. jar of strawberry preserves (we used “Simply Fruit”)
2/3 C. sugar
½ cup Johnny Syrup, (or any dark corn syrup)
½ tsp. salt
1 Tbsp. vanilla extract
Bread of your choice

In a bowl mix the eggs with the sugar, syrup, salt, and peanut butter. While stirring the egg mixture, pour in milk a little at a time until smooth. Add the vanilla. We put the peanut butter in the microwave for 30 seconds to soften, so it mixes easier.
Spray a 9 x 13 inch glass baking dish with cooking spray. I like to tear the bread up into pieces. Patti likes the crusts removed, I don’t care. Put a layer of the bread on the bottom of the dish. Then, scatter randomly spoonfuls of the strawberry preserves. Add another layer until you fill the pan, about 2 layers. Pour egg mixture over bread. Moisten all of the bread.
Put the baking dish onto a cookie sheet and into the oven at 350 degrees for an hour or until a toothpick comes out clean.
