Grilled Shrimp Pizza

"Hot in the city, hot in the city tonight..." 

That was the song playing on the radio by Billy Idol, when I came to work this morning, and by 10am the humidity was high and it was 86 degrees. I admit I love this weather! I just wish I was at the beach instead of work. The only thing bad is I have fair skin, so I burn, then I tan, so I am careful of that now I am older. In my early 20's when I worked at Cedar Point, I would burn so I get that tan. I would be dark at the end the season there, but at a price, very painful sunburns in the beginning.

I have been getting so many requests for summer recipes, many do not want to use the oven and heat the house up. One solution to that is the grill. Grilling is good for you anyways. It helps drain fats away from most items we eat like meats. Over the last few years pizza has been getting popular as the item to make on the grill.

Also home made pizza can be cheaper at home, then to have it delivered. I know your saying how is that possible. I am going to let you in on a Dee Dee secret, I utilize salad bars for toppings. Most salad bars at grocery stores have everything you could want on a pizza. 

Some, like the one near me have things like roasted chicken, salad shrimp, and other exotic items. Plus, it already chopped and prepared ready to go. At the most i have ever paid for these topping has been $1.50. I also will use salad bars for recipes, where calls for say 2 tablespoons of chopped peppers. It coast me say 5 cents for that 2 tablespoons, instead maybe 89 cents for a pepper, and I am not even using the whole thing.

Ingredients
pizza dough, of your choice 
2 tablespoons cornmeal 
1 teaspoon olive oil 
18 large shrimp, peeled and deveined (about one pound) 
1/8 teaspoon salt 
1 cup shredded part-skim mozzarella cheese 
1 cup queso fresco, crumbled 
3 tablespoons salsa verde 
1/4 cup fresh cilantro leaves 
garlic infused olive oil
smidgen of chili powder
1/2 lime

Direction
Combine cheeses; set aside. 
Thread 6 shrimp onto each of 3 wooden skewers. combine a little garlic infused olive oil and chili powder. Sprinkle shrimp with 1/8 teaspoon salt and brush them with the olive oil- chili powder mixture.Place skewers on grill rack coated with cooking spray, and grill for 2 minutes on each side or until shrimp are done. Cool slightly, and coarsely chop. 

Place dough on rimless baking sheet, brush the dough with the garlic infused olive oil (no chili powder)and sprinkled with cornmeal. Slide dough onto greased grill rack, using a spatula as a guide. Grill 3 minutes or until lightly browned on bottom; flip. 

Spread salsa over crust, leaving a 1/4 inch border. Top with shrimp and cheese mixture. Grill an additional 3 minutes or until crust is golden brown and cheese melts. Sprinkle with cilantro and serve immediately.

    Who hates this Yummy one...NO ONE but I used to have it with less cheese on it..

    Anyway thanks a lot for this as from last many month has passed I have not tried it so might be this weekend sure..JUST coz of U and your post.
