Patti and I have been working on a few treats to serve at the Weekly Tasting Event at Craft Brewing Company in Lake Elsinore, Ca. Sounded like some fun with plenty of good beer involved so we jumped right on it.

Thinking something smoked off the grill would be a good start for anything we came up with like Chipotle Nachos made with a smoked beef roast. Patti says I put too many chipotle peppers in the cheese sauce. You must know my reply to that by now: “never happen”. So, we had his & hers cheese sauce.

I seasoned the meat after stringing it with Jac’s Tailgaters Smoken Dust Chipotle Seasoning, nice touch.

For this recipe I am not going to tell you how to do your meat, just that it needs to be shredded. I found both beef and pork done on the grill or in the crock pot work well. Season the nacho cheese and “you be styling”. Do this to taste, I did 3 peppers to two cups of cheese. It was good, zippy for Patti’s taste. But for me I think I’ll do 4 or 5 peppers next time.

Quick, easy and gooooood, either for an appetizer to share or a main course.

Prep Time: 10 minutes

Remember the meat is already shredded for this one.

Ingredients:

3-4 lbs. of shredded meat, beef or pork (both are good)

Nacho Cheese Sauce, we bought a can from the market

Tortilla Chips

Chipotle Chili peppers, to taste, I used 3. (small can)

Sliced Jalapenos, to taste

Sour Cream, to taste (sometimes Patti substitutes onion dip)

 

Directions: Nacho Cheese Sauce

Do this to taste. I did 3 peppers chopped to two cups of cheese. Then, put it into the microwave for a minute to melt the cheese. Stir well and you are ready to eat!

Directions:

Fill a plate with your chips, cover with the shredded beef. Add the nacho cheese sauce. Then, add your sliced jalapenos, again to taste. Now top with sour cream.

I call it our “Wall of Grill”. Our grilling styles are healthy and low fat and will fit pellet heads, gas, natural wood and even charcoal purists. Almost any of our recipes can be done on any kind of good BBQ.

The important thing to keep in mind is TIME & TEMPERATURE. You can even do some of them in the oven or crock pot. But, then you lose all the flavors you get from cooking outdoors. But, sometimes it does rain.

Remember that a recipe is simply an outline; it is not written in stone. Don’t be afraid to make changes to suit your taste.
